Employing one of the most time-honoured fermentation techniques, our Sourdough balls prominently feature a critical component: the preserved 118-year-old fermented yeast, affectionately referred to as ‘Mother Yeast.’ This yeast plays a pivotal role in the fermentation of the dough, infusing it with the distinctive ‘sour’ flavour characterizing sourdough products. This not only enhances the dough’s flavour but also renders the resulting pizza more easily digestible.

Your dough balls will be delivered in a semi-frozen state and should be promptly stored in the freezer. They will maintain their freshness for up to 9 months when stored in the freezer, or up to 5 days when refrigerated.

We’ve curated an assortment of delectable vegan pizza dough, meticulously crafted using exclusively natural ingredients, then freshly frozen for your culinary enjoyment in the comfort of your own home.

Our organic dough is sourced directly from the Pillitteri family, whose roots are deeply embedded in the UK. Over time, the art of pizza-making has evolved, leaving traditional dough preparation techniques neglected, ultimately affecting the quality and authenticity of Neapolitan Italian pizza.

Fortunately, the Pillitteri family has remained steadfast in their commitment to preserving these time-honoured methods since the 1900s, passing down the craft of dough preparation through generations.

Using Your Dough:

The Ideal Method

  1. Remove the frozen dough balls from the freezer, keeping them in their individual bags. Place them on a tray, then let them thaw in the refrigerator at 4ºC overnight.
  2. The following day, carefully remove the dough from their bags and gently coat them with flour before returning them to a tray.
  3. Allow them to rest at room temperature, approximately 20ºC, for at least 1-2 hours before crafting your pizza. (Always keep the dough covered with a damp tea towel to prevent drying.)
  4. Roll and stretch the dough as needed, add your preferred toppings, and cook until perfection is achieved.

The Expedited Approach

  1. Take the frozen dough balls out of the freezer and place them on a tray in their respective bags.
  2. Leave them at room temperature, around 20ºC, for a minimum of 1 hour to defrost.
  3. Once defrosted, gently remove the dough from their bags, coat them with flour, and return them to a tray. Let them sit for an additional 1-2 hours. (Keep the dough covered with a damp tea towel to avoid drying.)
  4. Proceed to roll and stretch the dough as desired, add your chosen toppings, and cook until your culinary masterpiece is ready to enjoy.
