We source all our organic dough from the Pillitteri family members based in the UK. While many have attempted to master the art of pizza-making, the traditional methods of dough preparation have often been overlooked, leading to a decline in the quality and taste of authentic Neapolitan Italian pizza.
Fortunately, the Pillitteri family has unwaveringly adhered to traditional methods since the 1900s, passing down the art of dough preparation through generations. We wholeheartedly embrace their philosophy: “Perfect dough, perfect pizza, first time, every time.”
How to Use Your Dough
The Best Way
- Retrieve the dough balls from the freezer, place them onto a tray, keeping them in their separate bags, and let them refrigerate at 4ºC overnight.
- The next day, carefully remove the dough from their bags, dip them into a bowl of flour, and place them back onto a tray.
- Allow them to sit at room temperature, approximately 20º C, for a minimum of 1-2 hours before crafting your pizza (keep the dough always covered with a damp tea towel to prevent drying out).
- Roll out your dough using your hands and begin stretching it.
- Add your preferred toppings and bake until perfection is achieved.
The Quick Way
- Remove the dough balls from the freezer and place them onto a tray, still in their separate bags.
- Let them sit at room temperature, approximately 20º C, for a minimum of 1 hour.
- Once defrosted, carefully remove the dough from their bags, dip them into a bowl of flour, and place them back onto a tray, allowing an additional 1-2 hours for them to sit (maintain coverage with a damp tea towel to prevent drying out).
- Roll out your dough using your hands and commence stretching.
- Add your preferred toppings and bake until perfection is achieved.
